Nestled at Parkring 14, Donnersmarkt restaurant pays tribute to the extraordinary history of the building with The Thursday Markets.

This grand building was once the residence of the Donnersmarck family, who were pioneers in the region’s agricultural trade, bringing fresh produce from their northern Slovakian estate to local farmers' markets traditionally held on a Thursday. Today, their legacy lives on through the new culinary experience of Thursday Markets, which not only honors this rich heritage but also is the transition of "Donnersmarkt", now with Head Chef Albrecht Seltmann at the helm.

Behind the Flames: The Chef Reimagining Austrian Cuisine at Donnersmarkt

Meet Albrecht Seltmann, the new Head Chef at Donnersmarkt. Albrecht brings a modern twist to traditional Austrian cuisine with a strong focus on sustainable, plant-forward dishes. His passion for cooking began at an early age when he prepared family recipes like potato dumplings with his father. After a brief stint studying philosophy, Albrecht returned to the kitchen, gaining experience at Michelin-starred restaurants like Tian, where he developed a deep appreciation for sustainable, plant-based cuisine.

Albrecht’s vision for Donnersmarkt is clear: to create a modern take on Austrian Alpine-inspired cuisine, with a menu focused on vegetables, herbs, flowers, and locally sourced cheeses, all with a zero-waste ethos. His goal is to provide a genuinely sustainable dining experience that balances local culinary traditions with an innovative approach to cooking.

This innovative dessert, available on Donnersmarkt's dinner menu, tastes just like chocolate – but there’s none in it!

Traditional chocolate production often contributes to environmental issues like deforestation and biodiversity loss, while cocoa farmers are often paid unethically low wages. By choosing sustainable alternatives like Nokolade, you can enjoy a chocolate-like experience without these harmful impacts.
